To start, let me just say that breastfeeding makes me FAMISHED. Like I am truthfully starving all of the time. My appetite is triple (at least) what it normally is. To the point where my husband had the nerve to ask me if I might be pregnant again- HA!
I constantly feel like my belly needs to be full in order to function throughout the day. No more salads or apples to hold me over. I need full blown substance (bread bread bread).
Being a new mama, it is hard to find time to eat, let alone make a meal for yourself. You end up doing a lot of "grabbing & snacking" on whatever you can find. Generally (at least in my case) these are non healthy options-- cheese sticks, crackers, chips, cookies, bread, bread, and more bread. Anything that can fill me up quickly.
I was getting super sick of doing this, so I decided to try find a healthy snack-type recipe that would be quick and easy to make while still satisfying my hunger. I found these banana muffins and the rest is history. These babies have been my best friend since FWP was born and they are so easy to make even I cannot mess them up.

What you'll need:
2.5 cups old fashioned oats
1 cup plain greek yogurt
1/2 cup honey
2 tsp baking powder 1 tsp baking soda
2 tbsp ground flax seed
1 tsp vanilla
2 ripe bananas
*I try to use all organic ingredients to make them even healthier BUT that's totally up to you*
**I also usually like to add chocolate chips to half of the batter but I didn't have any on hand today-- if you do prefer to add them, mix them in after all of the ingredients are blended**
- Preheat oven to 350 degrees. Spray muffin tin with non-stick cooking spray or insert 12 muffin liners.
- Place the oats in a food processor and pulse for about 10 seconds or until blended into a powder like substance.
3. Add remaining ingredients to food processor. Process until everything is mixed together.
4. Pour mixture into muffin tin. I like to add some extra oats on top of the muffins to give them a more appealing look, but that is just preference. Bake for 18-20 minutes (or until a toothpick comes out clean)
